LAVENDER SYRUP Ingredients – makes 2 x 190 ml jars 1.5 cups water 1.5 cups granulated sugar 2 tablespoons fresh lavender blossoms A few drops of purple food coloring (optional but will stay clear without it) Method: Place all the ingredients into a pan over a low heat until the sugar has dissolved. Bring all ingredients to a boil and simmer for 5 minutes. Remove from heat and allow to steep 30 minutes. Return to the heat and bring back to the boil. Pour into sterilized jars and seal with lids. A perfect addition to ice cream, fruit tarts, lemonade, teas or cocktails.

I did this this year in late summer, except I mixed it up a little, did a few batches with roses, lavender AND roses, and also exchanged sugar for brown sugar on a few occasions.
Rave reviews y’all! It’s especially nice on ice cream and in coffee!

Ingredients 4 tsp Chai Spice black tea 1 vanilla bean, split and scraped, seeds and pod reserved 3 cups hot water 3 cups whole milk or unsweetened almond milk 1/4 cup honey or agave ½ cup spice-forward bourbon, like Maker’s Mark Cloves, cinnamon, nutmeg, ginger (opt.)
Directions 1. Combine the tea leaves and vanilla bean seeds and pod, and any additional spices with 3 cups hot water. Bring to a simmer over medium-high heat and add milk and honey or agave, whisking to combine. Return to a simmer, remove from heat, and allow to steep 10-15 minutes. Strain, pressing down on solids to extract flavors.
2. Transfer the chai to a heat-proof pitcher and stir in bourbon.
